Coconut sugar is a high-value product made from neera (coconut inflorescence sap). For the first time in Lakshadweep islands with the technical guidance of ICAR-CPCRI, the KVK produced coconut sugar on a trial basis as a foundation for scaling up. The success of testing was through the on-farm trial programme of KVK during 2021-22. Scientists from ICAR CPCRI, Dr. Thamban, Dr. A. C. Mathew, Dr. Subramanian and Dr. ShameenaBeegum were present during the production of coconut sugar. The neera extracted by using the coconut sap chiller was used to produce coconut sugar. Upon heating and continuous stirring, neera started turning to crystal form which is the sugar granules. During this period, it was made to cool suddenly. The process continued with stirring upon cooling to break the lumps. Coconut sugar has a market, and KVK is trying to scale up byestablishing small-scale units in three islands in the first phase with the support of ICAR-CPCRI. Tapper Mr. Jamal from Kavaratti stood outstanding by producing coconut sugar for the first time in the islands. This was made possible during a Workshop organized by KVK and ICAR-CPCRI.
